Soak my Oats

This quick and easy breakfast is made the night before and is ready to bring energy and nutrients to start your day.

A past classmate of mine introduced me to the soaked oats technique.  Soaking any grain decreases phytic acid and increases the absorption of nutrients in the body.

Prep time: 10 minutes

Yield 1-2 servings

Ingredients:

  • 1 cup oats (steel cut or rolled)
  • 1 cup coconut milk
  • 1 tablespoon maple syrup (or raw honey)
  • 2 tablespoons chia seeds
  • ½ cup blueberries (or fruit of choice)

Procedure:

Layer ingredients in a jar: oats, milk, maple syrup, seeds, then berries.  Allow to soak overnight. Oats can be eaten from the fridge or cooked. To increase the nutrient availability cook oats for 5 minutes.
