Surfer Caviar

A festive summertime take on traditional Cowboy Caviar, this lip-smacking dish combines tastes of the tropics with the buttery texture of California avocados for a big nutritional thumbs-up!

Serving Size: 4

Prep time: 35 minutes

Ingredients:

  • 1 Tablespoon small diced shallot
  • 2 Tablespoons extra virgin olive oil
  • 1 Tablespoon apple cider vinegar
  • Juice and zest from one small lime
  • 1 Teaspoon honey
  • 1 Tablespoon fresh cilantro, chopped
  • ½ Cup diced pineapple
  • ½ Cup diced tomatoes
  • ½ Cup diced avocado
  • 2 Cups small red beans, drained, rinsed
  • 2-4* tablespoons diced jalapeno (adjust to taste)
  • Salt and pepper to taste

Procedure:

Combine shallots, oil, vinegar, lime juice & zest, honey, and cilantro in a jar. Shake until emulsified. Place beans in a large bowl and toss with dressing, allow to rest at least 5 minutes. Next, add all other ingredients to the bowl for a quick toss before transferring to a large serving dish. Chill at least 10 minutes, but ideally overnight. This versatile recipe can be served as a bean salad, on top of greens, combined with rice, in a taco, or with tortilla chips as dip.
